Baking and Pastries students finished their Enriched Yeast Bread unit this week by preparing Cinnamon Star Wreaths featuring Hudson Cream Flour. The kitchen smelled amazing and the final product is beautiful!

Culinary 1 students are learning to prepare a roux to thicken sauces. Today they prepared a modified Bechamel that was incorporated into their menu of Chicken Fried Steaks, Mashed Potatoes, and Cream Gravy. This lesson also included many other competencies such as Shallow Pan Frying, Breading, and Vegetable/Starch Cooking Methods. This is also a way to discuss the superior quality of Kansas beef (this was locally raised and fork tender), as well as the versatility of Hudson Cream Flour which was used as the first coating for our chicken fried steak as well as used in the roux to thicken the gravy. This group of students worked extremely well as a team today as they each took responsibility for preparing different components and cleaning tasks. Culinary Arts teaches not only cooking skills for a lifetime, but also the essential skills of teamwork, leadership, problem solving, communication, and most definitely time management.

The middle school basketball team travels to South Barber this afternoon. Start time is 4:00.

There is no high school wrestling at Scott City tomorrow.

The high school boys basketball team travels to Central Christian tonight. JV boys play at 5:00 followed by Varsity boys. There are no girls' games.

Tomorrow's meals have changed. We will be serving Pop Tarts, Cereal Fruit Cocktail & Juice for Breakfast and for Lunch, we will serve Peanut Butter & Jelly Sandwiches, Goldfish and Bananas.
Our wrestling team will not be going to Hoisington today.

6th Hour Senior Culinary Applications students prepared a Cookies and Cream Brownie Layer Cake (Jan/Feb 2022 Issue of bake From Scratch) over the past two days. This is our first experience with Black Cocoa Powder - it is supposed to have a more intense chocolate flavor.

Culinary 2 is learning to fabricate whole chickens into the traditional eight pieces. The chicken will be used in both Culinary 1 classes as they prepare chicken stock with the carcass, then use the stock and chicken pieces in the study of the Five Mother Sauces and their derivative sauces. Culinary 2 students will prepare a Chicken Breast Roulade with sautéed bacon, shallots, and mushrooms.
You'll notice that the chicken breasts are cut "airline style", with the "drumette" still attached and the bone exposed. The Stafford High School Culinary Arts Program utilizes the National Restaurant Association's ProStart Curriculum. This is the method of chicken fabrication, including the airline chicken breast, that is demonstrated as part of this curriculum.
