
6th Hour Senior Culinary Applications students prepared a Cookies and Cream Brownie Layer Cake (Jan/Feb 2022 Issue of bake From Scratch) over the past two days. This is our first experience with Black Cocoa Powder - it is supposed to have a more intense chocolate flavor.


Culinary 2 is learning to fabricate whole chickens into the traditional eight pieces. The chicken will be used in both Culinary 1 classes as they prepare chicken stock with the carcass, then use the stock and chicken pieces in the study of the Five Mother Sauces and their derivative sauces. Culinary 2 students will prepare a Chicken Breast Roulade with sautéed bacon, shallots, and mushrooms.
You'll notice that the chicken breasts are cut "airline style", with the "drumette" still attached and the bone exposed. The Stafford High School Culinary Arts Program utilizes the National Restaurant Association's ProStart Curriculum. This is the method of chicken fabrication, including the airline chicken breast, that is demonstrated as part of this curriculum.

Hello families!
We've now entered into a new month in school (and a new year and semester... wow!) which means we're discussing a new topic in our school-wide social-emotional curriculum, Core Essentials.
This month, we're talking about self-control. We're defining self-control as "choosing to do what you should do, even when you don't want to". Wow... that is SO hard, yet SO important as we go through life! Self-control affects every aspect of our lives including academics, sports, friendships, relationships, and job performance.
Through the month we'll be talking about things like goal setting, accountability, and staying in control of our mind (thoughts) and body (behavior). Take a look at the attached images to see how you can continue this conversation and help your kids learn and practice self-control at home, too.
