HS boys play Attica for 3rd place tonight at Skyline at 5:00.


Our HS wrestlers are at Nickerson this afternoon.


After fabricating whole chickens, Culinary 2 students prepared a Chicken Roulade containing bacon, onions, garlic, and parmesan cheese. This technique involved tightly rolling the roulade in plastic wrap overnight so it would stay sealed together during the cooking process without the use of toothpicks or cooking twine. The roulade was pan seared on all sides and finished in the oven. An accompanying sauce was prepared with the pan drippings (fond), cream, and butter.

Our HS boys basketball team plays in the semi-finals of the 54 Classic (at Skyline) tonight. They take on Skyline at 6:30.


Baking and Pastries students finished their Enriched Yeast Bread unit this week by preparing Cinnamon Star Wreaths featuring Hudson Cream Flour. The kitchen smelled amazing and the final product is beautiful!


Culinary 1 students are learning to prepare a roux to thicken sauces. Today they prepared a modified Bechamel that was incorporated into their menu of Chicken Fried Steaks, Mashed Potatoes, and Cream Gravy. This lesson also included many other competencies such as Shallow Pan Frying, Breading, and Vegetable/Starch Cooking Methods. This is also a way to discuss the superior quality of Kansas beef (this was locally raised and fork tender), as well as the versatility of Hudson Cream Flour which was used as the first coating for our chicken fried steak as well as used in the roux to thicken the gravy. This group of students worked extremely well as a team today as they each took responsibility for preparing different components and cleaning tasks. Culinary Arts teaches not only cooking skills for a lifetime, but also the essential skills of teamwork, leadership, problem solving, communication, and most definitely time management.


The middle school basketball team travels to South Barber this afternoon. Start time is 4:00.

Skyline is strongly recommending that any person in the stands wear a mask at the 54 Classic.

Stafford Schools is hiring Substitute Teachers


Tomorrow's meals have changed. We will be serving Pop Tarts, Cereal Fruit Cocktail & Juice for Breakfast and for Lunch, we will serve Peanut Butter & Jelly Sandwiches, Goldfish and Bananas.

Our wrestling team will not be going to Hoisington today.
