Baking & Pastries students participated in a practical final - Cupcake Wars! Students were given a theme - "Spring Fling", and were asked to find recipes and decorating ideas that best fit the theme. Students developed a detailed timeline for production, practiced various piping techniques, sketched their concept for their finished cupcake, then prepared the recipe and decorated the cupcakes. 6 judges scored each entry on the following criteria: Bite-ability (cake to frosting ration), Frosting (flavor, type, texture), Cake (moistness, flavor, texture), Presentation (eye appeal), and Theme (fit the theme). The Lemon Raspberry cupcakes were chosen as the winner - these cupcakes featured a raspberry filling and buttercream icing.

Students enrolled in Culinary Arts 1 are busy finishing their practical final - the annual Food Truck Challenge. After a visit to Floyd's Smoke Shack food truck by the Stafford City Office, students were inspired to develop a concept for their own simulated Food Truck. There were many great ideas this year! Middle and High School students and staff voted for their favorite food truck concept - the top three finishers were: Spanish Dream "Explore other delicious cultures", Global Tokyo "A taste of the exotic", and The Breakfast Baker "We bake the cake". The students that created the top three food trucks are preparing their signature recipe to demonstrate various cooking methods and for their class to sample. So far we have enjoyed Chicken Croquetas "The most delicious bites of Spain, with a creamy and flavorful inside, and a crunchy outside.", and Sweet and Spicy Chicken "Chicken thighs cut into chunks, fried in our signature batter and coated in our secret sauce." Next on the menu are Creamy Strawberry Crepes!
